What is Blackening?
Blackening is a high-heat cooking technique that originated in Louisiana Cajun cuisine. The method involves coating protein in butter and seasoning, then searing it in a screaming-hot cast iron skillet until a dark, flavorful crust forms. The result is a beautifully charred exterior with a tender, juicy interior—packed with bold Cajun flavor in every bite.
Ingredients
Oregano, Celery Seed, Black Pepper, Bay Leaves, Cumin, Thyme, Cloves, Paprika, Salt, Onion, Garlic Powder, Sugar, Lemon Oil
Culinary Uses
- Fish: Classic blackened redfish, catfish, tilapia, or salmon
- Chicken: Blackened chicken breasts, thighs, or tenders
- Steak: Bold flavor on ribeye, strip steak, or flank steak
- Shrimp: Quick-seared blackened shrimp for tacos or pasta
- Pork Chops: Add Cajun flair to bone-in or boneless chops
- Vegetables: Try on cauliflower steaks or portobello mushrooms
- Burgers: Mix into ground beef or turkey for spicy Cajun burgers
- Seasoning: Sprinkle on fries, popcorn, or roasted vegetables
How to Blacken
Heat a cast iron skillet over high heat until smoking hot. Brush your protein with melted butter, then coat generously with blackening seasoning on both sides. Carefully place in the hot skillet and cook without moving until a dark crust forms (2-3 minutes), then flip and repeat. The butter helps the spices adhere and creates that signature charred crust. Note: This technique creates smoke, so use good ventilation!
