Smoky & Earthy Ancho Chile Powder

Here is a recipe sure to be a hit favorite!

As we prepare for the coming cooler weather (if it will ever get here), I always start to daydream about pulling out the layers, the dutch oven, and the crock pot for warm comfort food.

Living in the high desert southwest of Albuquerque NM, we have a plethora of hearty soups and meat dishes to keep us warm during our colder months. Yes it does snow in New Mexico, Albuquerque is over 5,000 feet above sea level and next to a touring mountain that reaches over 10,000 feet.

Ancho is always my go-to chile powder when I want a mild smoky and earthy flavor to take it up a notch in flavor. Ancho is the roasted and dried chile powder of the poblano pepper and this is one that is a regional favorite both in New Mexico & Mexico.
